Apple Pie and the 99-Year-Old Speeder

In a special episode of “Cooking With the Caprio's,” Judge Frank Caprio and his son David reunite with Victor Colella the “The 96-Year-Old Speeder” to get an update on his life, his son’s health and to cook one of his famous Apple Pies. Victor’s Apple Pie Ingredients: 7 or 8 Granny Smith apples Peeled and Quartered 3/4 cup sugar 1/4 tsp nutmeg 1 tablespoon cinnamon 1/8 teaspoon salt 1 tablespoon lemon juice 1 tablespoon butter 1 ½ tablespoon of Grand Marnier Pillsbury Ready-to-Bake Pie Crusts (or whatever brand you desire) ¼ cup milk Recipe: - Peel, core and slice the apples. - In a large mixing bowl, gently toss the apple slices, granulated sugar, cinnamon, nutmeg, salt, lemon juice, ¾ tablespoon butter, and Gran Marnier until well combined and set aside. -Place the oven rack in the center position and preheat your oven to 425°F. - Put the pie crust into the bottom of a 9-inch deep dish pie plate - Spoon the apple pie filling into the crust, discarding any liquid at the bottom of the mixing bowl. Spread the apple slices evenly. - Place the second pie crust over the apple pie filling. Pinch tightly on the edges. - Gently coat the top pie crust with the remaining butter. Then add a thin wash of milk. Be sure not to coat the edges. Cut 4 even slits into the pie crust, to allow the pie to breathe. - Bake the pie at 425°F for 40 minutes. Remove and allow to sit for 10 minutes.
