Kuih Lapis - Steamed Layer Cake is popular in Malaysia, Singapore and Indonesia. There are only few ingredients required to make this kuih for snack. Mine is the easiest way to make and it’s failproof. Ingredients: 11/2 cup water 1/2 cup coconut milk 1 cup rice flour 1/4 cup flour 1/4 cup corn flour 1/2 cup sugar 1/4 tsp salt Food colouring- green and red Instructions 1. In a mixie jar add all the above ingredients except food colouring 2. Blend well till no lumps 3. Strain the batter 4. Divide the batter into 3 equal portion 5. 1 for green, 2nd for red and 3rd for white 6. Use 1 standard measuring cup to pour the batter 7. Grease a steam pan/mould (5x7 inch) with a little oil. Place it in a steamer and steam until hot. 8. Pour 1st layer batter(green) into the mould and steam for 7-8 mins over medium heat 9. Pour 2nd layer of batter (white) into the mould and steam for 7 mins and continue repeating the process till 9 layers 10. I did green, white and red layers. 11. The last layer (9th) must be steamed for 20 minutes 12. Leave the Kuih Lapis to cool completely 13. Cut it with plastic knife into any shape you want. Tips : Cover the kuih with a cloth to avoid water dripping inside while steaming Each layer should be steamed properly before pouring a new layer.
