Click here to learn about the 10 KETO FOODS TO ALWAYS HAVE IN YOUR FRIDGE:    • 10 KETO FOODS YOU SHOULD ALWAYS HAVE ...   CREAMY FETA & ROASTED RED PEPPER CHICKEN DINNER 1 tablespoon olive oil 1/2 red onion, diced 3 cloves garlic, minced 1/2 lb cauliflower florets 12 oz jar roasted red peppers, drained & chopped 24-36 oz skinless, boneless chicken thighs 1 1/2 teaspoons paprika 1 1/2 teaspoons salt 1 teaspoon oregano 1/2 teaspoon pepper 2-3 cups chicken broth 2-3 cups baby spinach 3/4 cup crumbled feta 8 oz cream cheese juice from 1 lemon 1. Heat olive oil in a large pot over medium heat. Add onions & garlic and saute for 2-3 minutes. 2. Stir in cauliflower, red peppers, chicken, seasonings and broth. Bring to a simmer, cover and simmer for 10-15 minutes or until chicken is cooked through. 3. Remove chicken and shred with two forks. 4. If desired, use an immersion blender to blend up veggies with broth. 5. Return shredded chicken to the pot. Stir in spinach, feta, cream cheese and lemon juice.
