Authentic Dharwad Pedha

Ingredients: Sugar (To make Bura Sugar) - 3 Cups Milk powder - 2 cups (Used Nandini Brand here) Ghee 4-5 tbsp Milk - 1 & 1/4 cup Method: 1. Prepare Bura Sugar a. In a pan add 3 cups of sugar & add 1 cup of water. b. Keep on low flame and stir continuously. c. Keep stirring. d. Sugar dissolves completely. e. Small bubbles start appearing. f. keep stirring on low flame throughout. g. Sugar starts thickening & switch off the stove. h. Keep mixing & crush the sugar as shown. i. Sieve to get smooth and lump free texture. (Note: Do not grind Bura Sugar in the mixer) j. Bura Sugar is ready! the texture will be sand like 2. Heat a pan add 1 tbsp ghee. 3. Add milk powder. 4. Keep stirring and roasting on low flame throughout. 5. Add 1 tbsp ghee. 6. Mix well & keep stirring constantly to avoid scorching. 7. Slowly the colour starts changing. 8. Roast till perfect brown colour. 9. Now add 1/2 cup of milk & mix well. 10. Add milk little by little keep mixing. 11. Mix well till combine. 12. Add 1 tbsp ghee. 13. Give a good mix. 14. The mixture starts separating from the pan. 15. Transfer to a plate let it cool completely. 16. After around 2 hours of cooling add 1/4 cup Bura Sugar. 17. Combine Bura Sugar with the mixture. 18. Add another 1/4 cup of Bura Sugar & combine well. 19. Check and add Bura Sugar as per your sweet preference total 1 cup used here. 20. Perfect consistency for making Pedha. 21. Make small uneven shape balls. 22. Roll and coat the pedha in Bura Sugar. 23. Can be stored for 2 weeks In an airtight container. Authentic Dharwad Pedha Ready To Relish!!!
