In this video I make three loaves of white bread with Italian seasoning. I used the same exact recipe, same bread pans, same everything except the flour. 1. King Arthur Bread Flour 2. King Arthur All Purpose Flour 3. Gold Medal All Purpose Flour The results absolutely shocked me! Watch and see!! CAVEAT: I called King Arthur Baker’s Hotline and spoke to one of their bakers. She said she wasn’t surprised that the KA bread flour and KA AP flour breads were so close. She was surprised about the Gold Medal AP FLOUR. She thought that if I hadn’t added that ten g of flour to get the dough to the correct consistency, it might have caved in. She also said if I’d baked the breads in the bread machine there would probably have been a bigger difference. I really don’t want to do it again though, so I’ll leave this info with you to use as you will. I want to get back to inventing recipes now!!! Here’s the Zojirushi recipe from the Zojirushi Virtuoso Plus Recipe Book. (I added 4g Italian seasoning to each loaf.) 320g water 553g (bread flour) 4g Italian seasoning 8g dry milk 10g salt 35g unsalted butter 6g SAF instant yeast
