Longinus' is great for this since it has highest stab damage for long sword. Ideally you want to start attacking from opposite direction, instead slashing, you'll do a stab. You also can do it after a perfect block, you'll have to time it perfectly when your opponent get up, then execute the combo again, you can do this once his hand leave the ground make sure you face him.
