You can find the block, it is called "Selector". So go in the Simulink Library Browser, drag the selector block, double click it, set the Input Port Size to 8 (this makes it compatible to work with joysticks). Leave the other parameters as is. For this specific tutorial, you must have Simulink 3D Animation installed. However to use a joystick in general, you do not need 3D Animation.
