Check out our Instagram here:   / colessupermarkets   Courtney Roulston’s cheesy Carisma potato gratin Serves 10 as a side Cooking 1 hr 15 mins Prep 20 mins 20g butter, softened 2kg Coles Australian Carisma Washed Potatoes, thinly sliced 1 cup (250ml) thickened cream 1/2 cup (120g) sour cream 2 garlic cloves, crushed 2 tsp Dijon mustard 1 cup (120g) coarsely grated cheddar 1/2 cup (40g) finely grated parmesan 2 tbs thyme leaves 1/4 cup dill sprigs 1 lemon, zested 1. Preheat oven to 190°C. Grease a 10-cup (2.5L) baking dish with the butter. Place potato slices in a large bowl. Add the thickened cream, sour cream, garlic, mustard, cheddar, half the parmesan and half the thyme. Season well. Stir until well combined. 2. Arrange the potato slices in the prepared dish, overlapping slightly. Pour any remaining cream mixture from the bowl over the potato slices. Sprinkle with the remaining parmesan. 3. Bake for 1-1 1/4 hours or until golden and cooked through. Sprinkle with the dill, lemon zest and remaining thyme.
