Closed Captioning provided by Rev Time Codes: ---------------------- Make Dough - 1:05 Sauce & Beef Filling - 4:23 Fill & Bake - 9:34 Recipe: ---------------------- Step 1: Make Dough Ingredients: * 2 tablespoons sugar * 2 envelopes active dry yeast * ¼ cup olive oil * 1 ½ cups warm water * 4 cups flour * 2 teaspoons salt * ¼ teaspoon garlic powder 1) Whisk together sugar, yeast, olive oil, garlic powder and warm water to a bowl. Allow to sit for 5 minutes. 2) While yeast is blooming, add flour to a stand mixer bowl. 3) Add the yeasty water to the dough and turn the stand mixer with a dough hook attachment on medium speed. knead for 5 minutes. 4) Remove the dough from the stand mixer and add to a large bowl greased with olive oil. Cover with a wet towel and let rise for 2 hours. Equipment * 1 small mixing bowl * Fork * Stand mixer with dough hook * Large mixing bowl * Wet towel Step 2: Make Spread Sauce + Ground Beef Ingredients: * 2 tablespoons butter * 2 tablespoons flour * 1 cup milk * 1 tablespoon tomato paste * ¼ cup ketchup * 2 tablespoon sweet pickle relish * 1 ½ teaspoon sugar * Squeeze bottle of neutral oil * 1 lb Ground beef * 1 tablespoon minced garlic * Tony C’s * pepper 1) Heat butter + milk in a pan. Add the condiments: mayo, ketchup, relish, sugar, and vinegar. Reduce till thick and saucy. 2) In a pan, cook chopped onions and garlic down. Add beef with tony Cs, chop with wooden spoon. 3) Add spread sauce and toss. Equipment * Cast iron pan * Saute pan * Silicone spatula * Wooden spoon Step 3: Fill and Bake Ingredients: * 6 American cheese slices * 1 bowl spread beef mixture * 1 batch of chopped in-n-out fries * Caramelized onions, diced * 1 bowl whisked eggs * 1 small bowl of spread * Shredded lettuce * Tomato 1) Preheat the oven to 400 degrees. Roll out dough. Add a layer of cheese on the bottom. Add spread beef mixture to the top of that. Add more cheese on top of that. Add a even layer of fries and onions. Fold the dough over the filling and then braid the ends of the calzone. 2) Pour chopped fries out directly on a sheet. Brush the bottom of the calzone with egg wash, then flip it on top of the fries. Brush the top of the calzone with egg wash then press in more fry bits. 3) Add to a nonstick baking sheet and bake for 20 minutes.
