Westrobothnia is a region in northern Sweden and part of Lapland. It stretches from the Baltic Sea coast of the Gulf of Bothnia with its flat hinterland westwards to the Norwegian border, where mighty mountains rise. They grow on marshy soils and peat. The hjortron, as they are called in Swedish, are highly sought after. They contain three to four times as much vitamin C as an orange. Helena Ågren makes chutneys, jam, biscuit rolls and adds them to her homemade ice cream from freshly collected cloudberries. Helena and Tomas Ågren are ice cream farmers. They use the fat-rich milk from their Fjäll cattle - an old breed of cow that existed as far back as Viking times - to produce original ice creams such as cloudberry caramel or Västerbotten cheese To improve the quality of the milk and thus also of the ice cream, Tomas Agren entertains his cows with opera arias that he himself performs in the cow shed. If you eat too much of the mighty dumplings, you can fall into a 'palt coma'. A recipe from the end of the last century is tjälknöl, which translates as 'frost tuber'. The roast beef or elk is cooked at a low temperature for several hours and then made spicy and juicy in a brine. Thinly sliced and garnished with vegetables, Helena puts the meat on soft Tünnbröd so that it can be rolled into a wrap. Especially handy when you go out for a picnic. The Ågren family farm is not far from the Vindelälven - one of Sweden's very few natural rivers. There, the twins Ludvig and William fish for perch, stuff them with herbs and grill them. The dessert is, of course, cloudberry ice cream - the icing on the cake in the true sense of the word.
