Weighing a whopping 1.3kg (2.8 lbs) and served rare on a sizzling hot stone, Bistecca alla Fiorentina is a traditional Florentine dish! But...is it worth the hefty €112 price tag?? Trattoria dall’Oste has four steak houses across Florence sourcing the best breeds of cattle from Italy and the world. Bistecca alla Fiorentina or The Florentine Steak is a thick t-bone beef cut weighing anywhere from 1kg-4kg (2lb-8lb) and typically from the Chianina breed of cattle. The steak is grilled over a wood fire until it develops a charred crust on the outside while remaining rare and juicy on the inside, then traditionally, seasoned only with salt. According to who you talk to, there are a few rules to craft the perfect Bistecca alla Fiorentina: ● It must be eaten rare. ● The thickness is measured in fingers.
