Sourdough Simpleton Lexicon: Lame

One of the most distinctive characteristics of a loaf of sourdough bread is the slash, or pattern of slashes, on the top of the bread. This is needed to insure proper rising without tearing the crust, and also adds a personal touch to the loaf. The tool used to make those slashes is a sharp blade, called a "lame." Here is a little about that tool, the name, the types of blades, and how it works. This is one of the terms included in the Glossary of Sourdough Terms, a lexicon of words often baffling to the newcomer to sourdough baking.
