Instant Pot Veggies

Tough time getting all your veggies in? Instant Pot pressure cooker makes veggies quick, easy, and tasty!! If you would like to skip the video and just read the recipe, her you go! Instant Pot Veggies Ingredients: Yukon Gold Potatoes Carrots Beets Kohlrabi Apples Note: These veggies are a favorite combo of mine. I like to put the apples on top so the sweetness kind of melts into the other veggies. This method will work with with just about any root vegetables. Veggies like broccoli or cauliflower get a little soggy for my taste with this method. Onions can also be a great addition and can add nice flavor! Directions: Chop vegetables into big chunks(2” pieces). Leave skins on! Layer into the instant pot until full. Add 1/2-1 cup water. Seal the lid. Make sure the pressure valve is in the sealed position.(pointing towards you). Hit the “Manual” button. Press the “-“ button until the display says “0”. That’s it. Instant pot will start automatically. Wait for the beep. When beep sounds, release the pressure valve by turning it to the left or right. Steam will come out. Watch out, it’s hot! And loud. Once the steam has finished coming out, it’s safe to open the lid. Veggies will be hot. You can turn off the instant pot and let the veggies cool or remove carefully. The leftover liquid at the bottom is delicious! These are great alone or with a little salt. You can store them in the fridge and heat up to serve. Enjoy!
