Dry fry the diced spam first because there is plenty of oil and fat in it already. 2. Chop up the kimchi and Stir fry it in a little flavorless oil until it’s hot and translucent. 3. Mix the spam, kimchi, ketchup and rice together and stir fry using a little oil. I like to get the rice a little crispy on the bottom. 4. While the fried rice is going, in an omelette pan, make a very simple, thin, flat omelette. I usually used 2 beaten eggs with a tiny bit of salt and pepper. 5. Add fried rice to a plate and add omelette over it. Add more ketchup to taste. I bet kewpie mayo would be amazing on it. I like to add some furikake or green onion or crushed nori on top for garnish.
