This is a great recipe for Chicken Fried Chicken with Country Gravy on the Blackstone 22" Griddle. Chicken Fried Chicken: Heat about 1/2" of oil in a frying pan to about 350-375. Use three shallow bowls for two flour stations and one egg station. For this recipe I used about a cup of flour for each flour station and 4 eggs beaten with some milk added. Trim the fat off 2 chicken breasts, slice in half and flatten with a meat hammer or small pan. Season the chicken with your favorite chicken seasoning or salt/pepper/garlic. Also add a pinch of parsley flakes for color. Fry the breasts for about 4-5 minutes on each side, try not to turn to much at the beginning. Use a FORK and NOT a pair of tongues. After golden brown and an internal temp of 165 degrees or more they are done. Rest on a cooling rack so the air gets to the bottom and the top. Country Gravy: Empty the majority of the oil out of your pan you just used and leave about a tablespoon in the pan with all the trimmings. Get to a medium/high heat and mix all that good stuff with the oil. Add about 1/2 cup milk and start to whisk. Continue adding milk little by little and get it to the texture you want. In all it will be about 2 cups of milk, maybe a little more. Then add your seasonings salt, pepper, parsley flakes and chicken powder to taste (about 1 tsp each).
