Without a doubt, my favourite street noodles in China have got to be Chongqing Xiaomian. Super flavourful, spicy, those fried soybeans add a delightful crunch, and best of all, totally veganizable! 💁‍♀️Tip for Vegans: Order with "clear broth" which is just noodle water (all the flavour comes from the chilli oil anyways, so there's no sacrifice on flavour!) Chinese: 来一碗重庆小面,请用清汤做 Pinyin: Lái yī wǎn chóngqìng xiǎo miàn, qǐng yòng qīngtāng zuò English: I'd like a bowl of Chonqing Noodles, please use clear broth. ⚠️⚠️⚠️Warning: HIGHLY ADDICTIVE!
