The Coastal Classic - SURF n TURF | Cooking with Colin: Ep 16

I've had dreams about this meal since I made it. So good. I didn't follow any recipe in particular, kind of just combined a bunch of things I found online and then went jazz like you guys know I like to do. So, with that being said, I don't have a link to give you but here's my best recollection of ingredients/instructions: Ingredients: 1 tub Kerrygold butter 4-6 cloves of garlic Parsley NY Strip Steak 1-1.5 lbs of shrimp Fingerling Potatoes 1 Heirloom Tomato 1 Red Pepper 1 Avocado Whole Grain Mustard Olive Oil Cumin Trader Joe's Umami Seasoning Salt and Pep Sour Cream Rosemary Thyme For the Garlic Herb Butter: - Combine Salt, Pepper, finely chopped Parsley, 4-6 Cloves Garlic minced - Mush that sh*t till it's all mixed up nice For the Steak: - Leave at room temp at least 20 mins before cooking - lightly coat with Olive Oil then season all sides with Salt & Pep - Sear fat side down first (render the fat as they say in the biz) flipping about a minute each side - after 2 minutes add a GENEROUS amount of the garlic herb butter to the pan, then add your rosemary and your thyme and baste the steak until all sides got that nice crisp - Let it rest For the Shrimp: - Mix with Olive Oil, Salt and Pep - Drop those scrimps into the pan let em cook for a couple mins then add another GENEROUS spoonful of that garlic herb butter - When they're no longer translucent take em out and plate em For those naughty Taters - Coat with Olive Oil and season with Salt, Pepper, Cumin, Umami Seasoning and mix - Pop those taters into the air fryer set to 400 until crispy, mine took about 12-15 minutes but depends on your air fryer - Top with sour cream and a little parsley For the Salad: - Chop the heirloom tomato - Chop the red peppers - Dice the Avocado - Mix in a bowl with Olive Oil, Salt, Pepper, Crushed red pep for a kick, 1-2 tbsp of that whole grain mustard Slice that steak, plate it all, and just have at it.
