LUBIA POLO (mixed rice with green beans)

Serving size: 6 Ingredients: - 3 cups of basmati rice - 1 pound ground beef or 2 pounds stew beef cut into half an inch pieces - 2 pounds green beans cleaned and cut into 1/2 an inch pieces - 3 tablespoons of tomato paste or 6 large fresh tomatoes peeled & sliced - 2 large onions diced - 1 tsp ground cinnamon - 5-6 tbsp olive oil (for sautéing the onions& green beans) - 1/4 cup oil for the bottom of the rice - 2 tsp turmeric - Salt & pepper to taste - 1/2 tsp ground saffron dissolved in 2 tbsp of hot water For the vegetarian version:Add 1 &1/2 pounds of portobello mushrooms( washed & cut into small pieces) instead of meat
