Ingredients: 3 ¾ cups bread flour (450 grams) 2 ¼ teaspoons instant yeast(7 g- one packet) 1 ¾ teaspoons salt (10 grams) 1 ½ cups warm water 120°F(49 C) (360 ml) Instructions: Dissolve one yeast packet in 1.5 cups of 120°F (49°C) water. Add 1 tsp sugar and 1 tbsp flour. Rest for 5-10 minutes until frothy. In a large bowl, mix 3.75 cups of bread flour with salt. Pour in yeast mixture and stir until shaggy dough forms. Lightly oil the dough, cover it, and refrigerate it for at least 8 hours. After 15 hours, transfer the chilled dough to a floured surface and shape it into a round loaf. Place on baking paper-lined pan, cover, and let rise for 1-1.5 hours. Preheat oven to 464°F (240°C). Sprinkle flour and create shallow slashes on the dough. Bake covered with a steel bowl for 18 minutes, then uncover and bake at 428°F (220°C) for 35 minutes or until golden brown. Allow to cool for 20 minutes before slicing.
