Makhni Raan Roast Recipe By Food Fusion (Bakra Eid Special)

This year another special Raan Roast Recipe for you all. #HappyCookingToYou #FoodFusion #Nurpur Written Recipe: https://bit.ly/3R3RCON Recipe in English: Ingredients: -Mutton leg 1 & ½ kg -Kacha papita (Raw papaya) paste 1 & ½ tbs -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Lemon juice 2-3 tbs -Kaju (Cashew nuts) 6-7 -Kasuri methi (Dried fenugreek leaves) 1 tbs -Zeera (Cumin seeds) 2 tsp -Sabut kali mirch (Black peppercorns) ½ tsp -Badi elaichi (Black cardamom) 1 -Nurpur Butter salted 40-50g -Lal mirch powder (Red chilli powder) 1 tbs or to taste -Haldi powder (Turmeric powder) ½ tsp -Namak (Salt) 2 tsp or to taste -Chaat masala 1 tsp -Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp -Dhania powder (Coriander powder) ½ tbs -Dahi (Yogurt) hung 2 tbs -Tomato paste 1 & ½ tbs -Aloo (Potatoes) wedges -Namak (Salt) adjust salt if required -Nurpur Butter salted 2-3 tbs -Hara dhania (Fresh coriander) chopped -Lemon slices Directions: -Score the leg of mutton leg with the help of sharp knife,place deep cuts on both sides. -In a bowl,add mutton leg,raw papaya paste,ginger garlic paste,lemon juice & rub well on both sides,cover with cling film & marinate for 2 hours. -In a spice mixer,add cashew nuts,dried fenugreek leaves,cumin seeds,black peppercorns,black cardamom,grind well & set aside. -In a bowl,add butter & microwave for 30 seconds. -In melted butter,add red chilli powder,turmeric powder,salt,chaat masala,Kashmiri red chilli powder,coriander powder and mix well. -Add yogurt,tomato paste,ground spices & mix well. -On marinated mutton leg,apply & rub well prepared marinade on the both sides of the mutton leg,cover with cling film and marinate for 6 hours or overnight in refrigerator. -On baking tray,place marinated mutton leg & tie with kitchen thread. -In remaining marinade,add potatoes & mix well. -Add salt and mix well. -On baking tray,place potato wedges,cover with aluminum foil & bake in preheated oven at 180C for 1 hour (keep both grills on) -Take out baking tray from oven,remove aluminum foil,apply marinade from baking tray on mutton leg where required & potatoes with the help of brush. -Bake again in preheated oven 180C for 20 minutes (keep top grill on). -In a small bowl,add butter & heat it. -Drizzle melted butter on mutton leg & garnish with fresh coriander,lemon slices & serve! Recipe in Urdu: Ajza: -Mutton leg 1 & ½ kg -Kacha papita (Raw papaya) paste 1 & ½ tbs -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Lemon juice 2-3 tbs -Kaju (Cashew nuts) 6-7 -Kasuri methi (Dried fenugreek leaves) 1 tbs -Zeera (Cumin seeds) 2 tsp -Sabut kali mirch (Black peppercorns) ½ tsp -Badi elaichi (Black cardamom) 1 -Nurpur Butter salted 40-50g -Lal mirch powder (Red chilli powder) 1 tbs or to taste -Haldi powder (Turmeric powder) ½ tsp -Namak (Salt) 2 tsp or to taste -Chaat masala 1 tsp -Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp -Dhania powder (Coriander powder) ½ tbs -Dahi (Yogurt) hung 2 tbs -Tomato paste 1 & ½ tbs -Aloo (Potatoes) wedges -Namak (Salt) adjust salt if required -Nurpur Butter salted 2-3 tbs -Hara dhania (Fresh coriander) chopped -Lemon slices Directions: -Sharp knife ki madad sa mutton leg ki dono sides per deep cuts laga lein. -Mutton leg mein kacha papita,adrak lehsan paste aur lemon juice dal dein aur dono sides per ache tarhan rub ker lein,cling film sa cover karein aur 2 hours kliya marinate ker lein. -Spice mixer mein kaju,kasuri methi,zeera,sabut klai mirch aur badi elaichi dal ker ache tarhan grind ker lein & side per rakh dein. -Bowl mein makhan dal ker 30 seconds kliya microwave ker lein. -Melted makhan mein lal mirch powder,haldi powder,namak,chaat masala,Kashmiri lal mirch powder aur dhania powder dal ker ache tarhan mix ker lein. -Dahi,tomato paste aur ground spices dal ker ache tarhan mix ker lein. -Marinated mutton leg mein tayyar marinade dal ker dono sides per ache tarhan laga lein aur cling film sa cover ker ka 6 hours or overnight kliya refrigerator mein marinate ker lein. -Baking tray mein marinated mutton leg rakh dein aur kitchen thread sa tie ker lein. -Remaining marinade mein aloo dal ker ache tarhan mix ker lein. -Namak dal ker ache tarhan mix karein. -Baking tray mein aloo ka wedges dal dein,aluminum foil sa cover karein & preheated oven mein 180C per gul janay tak bake ker lein (1 hour) keep both grills on. -Baking tray ko oven sa nikal lein,aluminuim foil ko hata lein aur baking tray mein sa marinade ko brush ki madad sa mutton leg per laga lein. -Preheated oven mein 180C per 20 minutes kliya bake ker lein (keep top grill on). -Chotay bowl mein makhan dal ker garam ker lein. -Melted makhan ko mutton leg per drizzle ker lein,hara dhania aur lemon slices sa garnish ker ka serve karein!
