Making a Year's Worth of Sugar

I made a year's worth of sugar from the maple syrup we made last year. Making maple sugar is a great way to be self-sufficient on our homestead. Maple sugar can be used in place of white or brown sugar in baking recipes. To make maple sugar, heat maple syrup, or maple sap, to 262°F. To keep the syrup from boiling over, put butter around the rim of the pot, use a tall pot or use a wooden spoon to keep the bubbles down. Once at 262°F remove from heat and mix with beaters until it turns into granulated sugar. Sift the sugar to remove the clumps. Blitz the clumps in a food processor or coffee grinder until they turn to granulated sugar. Let the sugar cool before putting it in a container to store for the year. Add maple sugar and beat for 3 minutes. Add vanilla and beat. Mix dry ingredients. Add dry to wet and stir. Dough should stick together when squeezed. Shape into balls, place on greased cookie sheet, and flatten with a fork (or cool, roll and cut out). Bake for 10 to 15 minutes at 325°F.
