Super Soft and Fluffy Brioche Buns Recipe Ingredients: 200ml warm milk (205g) 1 Tbsp (12g) sugar 1 tsp (3g) dry active yeast 300g all-purpose flour 1/2 tsp (4g) salt 60g unsalted butter, room temperature For Brushing: 1-2 Tbsp milk 1 Tbsp unsalted butter Instructions: 1. Warm the milk in the microwave for about 20-30 seconds. Add the sugar and yeast to the warm milk, then stir to combine. Add the flour and mix until a cohesive dough forms and no dry flour remains. 2. Place the softened butter on top of the dough. Knead the butter into the dough in the bowl or on a work surface by hand. Initially, the butter will be messy, but continue kneading until it fully incorporates. ( continue kneading the dough until it is smooth and no longer sticky, approximately 5-10 minutes.) 3. Gluten Window Test: Stretch a small piece of dough gently. If it becomes slightly translucent without tearing, it’s ready. 4. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 60 minutes. 6. Once proofed, divide the dough into 6 or 8 equal portions. Shape each piece into a tight ball with your hands and place it on a baking tray lined with parchment paper. 7. Cover the buns with plastic wrap and let them rise until doubled in size, about 50-60 minutes. During the last part of this rise, preheat your oven to 350°F (180°C). 8. Brush the tops of the buns with milk. If desired, sprinkle sesame seeds on top. Bake in the preheated oven for 20-25 minutes or until the buns are golden brown. While the buns are still hot, brush them with melted butter. These brioche buns are perfect for burgers or other sandwiches. Enjoy! my Instagram:   / atijourney
