Tenerife is the largest island of the Canary Islands, the 'Islands of Eternal Spring'. It is dominated by Mount Teide, a 3700 metre high volcano, the highest peak in Spain. Cristina González and her large family live in La Orotava, a town in the Orotava Valley, in the green north of the island. First, boxes of flowers are plucked, cut and sorted by colour. On the morning of the procession, hundreds of volunteers create the colourful flower carpets, which show patterns and Christian motifs. In front of the market square, a massive painting of four tonnes of sand is strewn over several weeks. It is a celebration of beauty and transience, as within minutes the images disappear under the feet of the processionists. This is accompanied by papas arrugadas, which are cooked with lots of sea salt. Also red mojo, also called mojo picón, a spicy sauce made from paprika, garlic, olive oil, red wine vinegar and croutons. Lapas are also typical on Tenerife. They look like mussels, but they are limpets eaten with green mojo. Cristina also swears by chayote, a pumpkin plant that she grows in her own orchard. Chayote have a very favourable protein-starch ratio and are therefore also very suitable for diabetics, e.g. as a potato substitute.
