If there's one thing that's difficult on the Autoimmune Paleo (AIP) Diet, it's last-minute meals. Planning seems to be kinda necessary for most meals, so when you want to go somewhere NOW, it's hard to make something quickly. I to give you a meal option though that works really well for an on-the-go portable lunch and can be customized a ton of different ways. It also only requires one fresh ingredient. You can definitely add more, but only one thing isn't a pantry or fridge staple that you probably have already.
