Here's to picking up our Self Care Balls in 2022. I forgot to include beverages and snacks! Upon arising I drink a large glass of water...rehydrate after 8 hours with no fluid...then Black Coffee! I try to keep my coffee to 2 or 3 cups and none after 12 noon. Through out the day I drink water and my beverage of choice...Organic Iced Green Tea (unsweetened). My goto snacks include mixed nuts, olives, humus and crackers and I have a weakness for cheesy popcorn. I'm more into salty crunchies than sweets but I do love a chunk of dark chocolate after dinner. ITALIAN RAINBOW SOUP (I don't really measure) Use Organic when possible Brown 1 Lb Hot Italian Sausage, drain and set aside. Saute in Olive Oil one large diced onion till soft. Add chopped celery and carrots and saute for a while Add minced garlic and saute only until fragrant. (I use several cloves) Add: 1.5 to 2 quarts of Chicken or Veggie Broth. Browned Hot Italian sausage hunk of parmesan cheese rind 1 Bay Leaf 1 large sweet potato chopped. Bring to boil and reduce to simmer. Add chopped green and yellow zuchinni and simmer until tender. In the last 5 or 10 minutes add 1 head Kale chiffonade, a couple of cans of beans (drained and rinsed). I love cannelini and kidney beans. And a couple of cans of diced tomatoes to taste. I usually cook spiral pasta separately and stir in at the end. YUM! My Daughter's Sugar Free Fudge (measurements approximate) 3 Cups Sugar Free Chocolate Chips 1/2 cup Heavy Whipping Cream 1 cup Nut Butter (we love almond butter) Melt all together in a double boiler and spread into a pan or push into molds.
