⬇️⬇️English recipe follows⬇️⬇️ 蒜香雞煲仔飯(2人份量) 材料: 雞髀2隻 雞翼2隻 臘腸1條 油尖米2膠嘜 蒜頭8粒 薑8片 處理: 1. 冰鮮雞,用粗鹽1湯匙乸5分鐘,去除雪味、腥味及加入少許鹹味。 2. 蒜頭,去皮,刴碎。 薑,去皮,切片。 3. 冰鮮雞,切出雞髀及雞翼,清水洗乾淨,擎乾水。 4. 雞髀,切件。 雞翼,1開3。 5. 雞調味: a. 蒜蓉1湯匙 b. 薑片 c. 生粉1大湯匙 d. 生抽1湯匙 e. 蠔油1湯匙 f. 米酒半湯匙 撈勻,再加入: a. 胡椒粉半茶匙 b. 糖半茶匙 撈勻,再加入油半湯匙撈勻,醃15分鐘以上。 6.臘腸,用大滾水淥1分鐘。 烹調: 1. 油尖米,放煲仔內,清水洗乾淨。 2. 加入清水,大約高過米面半吋。 3. 大火煲滾至起泡,鋪雞件及臘腸在飯面,轉中火,冚蓋,煮至收水,大約需時5分鐘。 4. 飯及雞件開始熟,轉最慢火,煮10分鐘。 5. 熄火,再焗10分鐘。 6. 四邊慢火燒1分鐘。 7. 完成,可享用。 Claypot rice with chicken and garlics (serving for 2) Ingredients: Chicken legs 2 Nos. Chicken wings 2 Nos. Chinese sausage 1 No. Plain rice 2 plastic cups Garlics 8 Nos. Ginger 8 slices Preparation: 1. The chicken, season with cooking salt 1 tbsp for 5 minutes to remove unpleasant smells and add some salty tastes to it. 2. Garlics, get them peeled. Chop well. Ginger, get it peeled and sliced. 3. The chicken, cut out the legs and wings. Rinse thoroughly. Drain. 4. Chicken legs, cut in pieces. Chicken wings, divide each into 3 shares. 5. Season the chicken: a. Garlics sauce 1 tbsp b. Ginger slices c. Tapioca starch 1 big tbsp d. Light soya sauce 1 tbsp e. Oyster sauce 1 tbsp f. Rice wine 0.5 tbsp Mix well, add in: a. Pepper 0.5 tsp b. Sugar 0.5 tsp Mix well. Add in oil 0.5 tbsp, mix well. Season for 15 minutes or more. 6. Chinese sausage, rinse with boiled~up water for a minute. Steps: 1. The plain rice, put into pot, rinse with tap water. 2. Add in water, the volume of water is above the rice for 0.5 inch. 3. Heat up the rice at high flame. Bubbles coming up in rice, add in chicken and Chinese sausage on top. Turn to medium flame. Cover up the pot, cook until the rice has been cooked well. It takes about 5 minutes' time. 4. Rice and chicken pieces are to be started to cook well, turn to low flame. Cook for 10 minutes more. 5. Turn off fire. Leave it for 10 minutes. 6. Heat up the rice at low flame in 4 sides. Each side to be cooked for a minute. 7. Complete.
