Indian Curry Pasta

This was one of my favourite things I had whilst travelling whilst in India and here is my version for you to make at home! The cheddar cheese is essential to grate over the top, no parm here folks x 1 small onion ½ green pepper 8 green chillies 8 cloves garlic A large knob Ginger 2 tbsp ghee (or butter) ½ tsp cumin seeds 75g tomato puree 1 tsp chilli powder 1 tsp cumin powder 1 tsp coriander powder 200ml double cream 500g pasta 100g cheddar cheese. Finely chop the onion and green peppers. Bash up the ginger, garlic and green chillies with a large pinch of salt in a pestle and morter. Put the pasta on to cook in boiling salted water. Add the ghee to a pan with your cumin seeds, onions and peppers. Cook for a few mins until golden and softened and then add in the garlic paste and your ground spices. Cook for another 2 mins. Add in the tomato puree and cook for 5 mins until the the paste has darkened in colour. Stir in the cream and 200ml of pasta water with your cooked pasta. Stir well and season with salt. Grate over the cheese and serve.
