Samosa Recipe | Spicy & Crispi Samosa | Mansoon Special Panjabi samosa Recipe |How to make Samosa A samosa is a fried South Asian pastry with a savoury filling, mostly vegetables, spiced potatoes, onions, peas, also non-vegetarian meat, or fish. It is made into different shapes, including triangular, cone, or crescent, depending on the region. Ingredients For the Dough: 2 cups all-purpose flour 1/4 cup oil or ghee 1/2 teaspoon salt 1/2 cup water ( As needed) For the Filling: 3-4 large potatoes, boiled and mashed 1/2 cup green peas (optional) 1 tablespoon oil 1 teaspoon cumin seeds 1 teaspoon mustard seeds 1 teaspoon finely chopped ginger 1-2 green chilies, finely chopped (optional) 1/2 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon coriander powder 1/2 teaspoon cumin powder Salt to taste 2 tablespoons chopped fresh cilantro (optional) Juice of 1/2 lemon For Frying: Oil for deep frying Instructions Preparing the Dough: In a large bowl, mix the flour, salt, and oil/ghee. Gradually add water and knead into a firm dough. Cover and let it rest for 30 minutes. Preparing the Filling: Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter. Add chopped ginger and green chilies. Sauté for a minute. Add the green peas (if using) and sauté for another 2 minutes. Add the mashed potatoes, turmeric powder, garam masala, coriander powder, cumin powder, and salt. Mix well. Cook the mixture for 5-7 minutes, stirring occasionally. Add chopped cilantro and lemon juice. Mix well and let the filling cool. Assembling the Samosas: Divide the dough into small balls (about the size of a golf ball). Roll each ball into an oval or round shape, about 6-7 inches in diameter. Cut the rolled dough in half to form two semi-circles. Take one semi-circle and form a cone by bringing the straight edges together, overlapping slightly, and sealing with a little water. Fill the cone with 1-2 tablespoons of the potato filling. Seal the open edge by pressing firmly, using a little water if needed. Ensure there are no gaps. Frying the Samosas: Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the samosas, a few at a time, without overcrowding the pan. Fry the samosas until they are golden brown and crispy, turning occasionally. Remove and drain on paper towels. Serving Serve hot samosas with mint chutney, tamarind chutney, or ketchup. Enjoy!
