Easy Gluten Free Sourdough Sandwich Bread (made in one day, no Dutch oven needed)!!

This gluten-free sourdough sandwich bread is so delicious and easy to make. It doesn’t need a levain the day before, and with the addition of yogurt, the flavor is on point, so no need to do an overnight proof in the refrigerator. Ingredients: - 235g warm water - 20g honey - 18g psyllium husks - 80g potato starch - 70g tapioca flour - 80g oat flour - 80g brown rice flour - 12g salt - 300g gluten-free sourdough starter - 125g plain yogurt (can be regular or dairy free) - 1 tsp apple cider vinegar Directions: 1. Combine water, honey, and psyllium husks in a measuring cup. Sir well to combine. Set aside to weigh dry ingredients. 2. To a large mixing bowl, add potato starch, tapioca flour, oat flour, brown rice flour, and salt. Whisk to combine. 3. To the bowl of a stand mixer, add gf sourdough starter, yogurt, apple cider vinegar, and psyllium/honey mixture. Whisk to loosely combine. 4. Use the paddle attachment on your stand mixer to mix until a cohesive dough forms and no dry flour remains. 5. Form the dough in a ball and cover the bowl. Let sit for 20 minutes. 6. Shape into a log and add to a greased 9 x 5 loaf pan. Cover and let rise at warm room temperature for 3-5 hours. 7. Preheat oven to 425 degrees 8. Score and bake for 1 hour and 20 minutes
