I tried something this week that I've never done before and I felt kind of nervous about cutting into that cardigan, but it worked out quite well I think! Wishing you some last cozy winter days (spring is on the doorstep already here in the Netherlands!) VEGAN & GLUTENFREE OATMEAL BARS RECIPE: 125 ml vegetable oil 75 ml plant-based milk ( I use oatmilk) 70 grams of brown caster sugar 2 tbsp broken flaxseed (soaked in 4 tbsp water for 5 minutes) handfull of mixed, unsalted nuts 225 grams of finely ground oat flour 150 grams of chopped dates 100 grams of oat flakes 2 tsp baking powder 1 tsp cinnamon Pinch of salt 1. Preheat the oven to 180 degrees celsius. 2. Chop the nuts and dates into small chunks. 3. Place the oil, plant-based milk, caster sugar and flaxseed in a bowl and stir well. 4. In a separate bowl, add the finely ground oat flour, the oatmeal flakes, cinnamon, baking powder and a pinch of salt. Stir this well. 5. Add the wet mixture to the dry mixture and stir into a batter. It is quite a stiff batter, so stir long enough until all the ingredients are mixed well. 6. Lastly, add the nuts and dates into the batter. 7. Place the batter on a baking tray lined with baking paper. Smooth the top with a spatula so that the batter is about 3cm thick. 8. Bake the vegan oatmeal bars for about 40 to 45 minutes.
