Low Sugar Strawberry Apricot Jam. I use Pomona's Pectin. I love this produce because you can make a large batch or small batch of jam or Jelly. You can control how much sugar you use, or use agave, maple syrup, honey, stevia or no sugar at all. You can make your own recipe or use one of the many recipes from Pomona's, When you are creating the amounts of fruit, you use 1 tsp each of the calcium water & 1 tsp of the pectin for every 2 cups of fruit used. The only draw back to using Pomona's Pectin, is that it doesn't last as long in the refrigerator once its been opened. It lasts about a month in the frig. I made a small batch: 3 1/2 Cups Diced Strawberries 3 1/2 Cups Diced Apricots 3 Cups Sugar 1/2 C Lemon Juice 4 tsp calcium water 4 tsp citrus pectin. My second batch was a larger Batch 7 Cups Diced Strawberries 7 Cups Diced Apricots 3 1/2 Cups Sugar 1 Cup Lemon Juice 7 tsp calcium water 7 tsp citrus pectin I hope you will feel inspired to can a batch or two of Jam or Jelly Happy Canning, Love Backyard Barb
