WOW, PACKED WITH FLAVOR!! Cooked low and slow, but what a payoff: super tender meat, perfect for a big family gathering or for when you want leftovers for other meals down the road. ❤ INGREDIENTS 1 1/2 Tbsp smoked paprika 1 1/2 Tbsp chili powder 1/2 tsp cayenne pepper 1 1/2 Tbsp onion powder 3 tsp dry mustard 1 1/2 Tbsp garlic powder 1 1/2 tsp ground cumin 2 tsp black pepper (to your liking) 6 Lb. Pork shoulder roast • mix all ingredients together (set aside) •Trim excess fat from roast, cut into four pieces • rub seasoning well all over roast • wrap well with saran wrap and marinate all night NEXT DAY INGREDIENTS •1 15oz.can sliced peaches in heavy syrup • 1/4 cup Worcestershire sauce • 1 C. diced tomatoes w/chilies (optional) • 1 C. BBQ sauce (with Brown sugar) • 3 onions cut into pieces • Next day, PRE-HEAT oven to 300° (remove saran wrap and discard) cut onion into pieces and lay a bed in bottom of roaster • salt meat to your liking • place 4 pieces of meat on top of onions • cover with lid and place in pre-heated 300° oven • set timer for 2 hours • 20 minutes before timer goes off simmer peaches with syrup, Worcestershire sauce, diced tomatoes with chilies, and BBQsauce in a saucepan • after 2 hours, take roaster out of oven and skim off fat from the cooking liquid • pour mixture into roaster and stir together • add brown sugar if you want it sweeter. • cook approx 3 more hours till falling apart and well cooked (approx 5 total hours) • when pork is ready transfer to cutting board and cover with aluminum foil skim the fat from the cooking liquid, then bring liquid up to a low boil • pull the pork shoulder to shreds and transfer to serving bowl and pour liquid over meat then serve. ☆ careful with hot roaster and keep children away from stove DISCLAIMER DO NOT EAT OR SERVE THIS DISH TO ANYONE WHO IS OR MIGHT BE ALLERGIC TO ANY INGREDIENT IN THIS DISH.
