Start by heating the olive oil over medium heat with chopped onion. 2. Cook onions until translucent then add the sliced garlic. 3. Once slightly golden brown, add in tomatoes, salt and pepper, sugar, and basils. 4. Lit simmer until ready to use. HOT PEPPER RELISH COOKING METHOD: 1. Add long Italian peppers to a wire rack on a rimmed baking sheet. Place into a broiler. 2. Flip once dark and roasted and repeat on the other side. 3. Add roasted peppers to a heat-proof bowl and cover to steam. 4. Remove from the bowl and peel the skin off the peppers. 5. Cut into little pieces, add to a bowl, and season with salt, pepper, red wine vinegar, olive oil, lemon juice, and chopped parsley. Stir until combined. CHICKEN COOKING METHOD: 1. Bread the chicken using seasoned all-purpose flour and whisked eggs then cover with panko bread crumbs. Place on a wire rack on a rimmed baking sheet. 2. In a cast iron pan, fill halfway up with extra virgin olive oil and heat over medium-high heat. 3. Add breaded chicken to the oil and cook until golden brown. Flip and repeat on the other side. 4. Once fully golden brown, place on a wire rack on a baking sheet and season with salt. 5. Place fried chicken on a wire rack in a rimmed backing sheet, spread tomato sauce on top of the chicken. Top with a few slices of fresh mozzarella and grated parmesan. Add to a broiler until cheese is melted. 6. Slice the buns in half. 7. Once the cheese is melted, add chicken to the sliced buns and top with hot pepper relish. Enjoy!
