Ingredients Brownie 7 ounces dark chocolate (70%) 3.5 ounces vegan butter 3/4 cup brown sugar 1/2 cup aquafaba (liquid from chickpeas can) 1 cup all purpose flour 1/2 cup dark chocolate chips Compote 2 cups frozen cherries 1 tbsp chia seeds Cream 1 cup of cocowhip or any whipping cream of choice The Magic 1. Preheat the oven to 350F(180C) and line a 8x6 inch baking tray with baking paper 2. Melt the 7 oz of dark chocolate and butter using the double - boiler method* . Stir regularly until both are melted fully. 3. Add aquafaba into a mixing bowl whisk using an electric whisker till it forms a thicker foamy liquid white in color. there should be no separation of liquid and foam, it should all come together - takes about 5 minutes. 4. Add the melted chocolate to the aquafaba and mix together either with the electric whisk or hand whisk 5. Sift in the flour and add the sugar into the mixture and fold into the liquid. till to forms a smooth batter. 6. Pour into your baking tray and bake for about 30-35 minutes. take the brownies out and let cool for 10 minutes before cutting into squares (the size is optional!) . 7. Make the compote by adding the frozen cherries into a small pot with 2 tbsp water and cover, once the cherries start to soften and release their juice, add in the chia seeds. Let the compote cook for about 5 minutes till thick and juicy, remove from heat let cool for 10 minutes then transfer into a bowl or jar and pop in the fridge till time to serve. 8. To serve, add a piece of brownie, dollop of compote and cream. Say a prayer of gratitude, and eat with joy! *Add water to a pot and bring to boil, add a heat resistant bowl that fits ontop and add chocolate and butter into that bowl), the bottom of the bowl should not touch the water. the steam trapped between the bowl and the pot will melt
