This is a simple but oh-so-good pasta dish! Maria preserves her own olives which most of us are unlikely to do, so make sure you buy the best you can find - still with pips in, because they have the best flavour. For the fettuccine, use 2 eggs, pinch of salt, and 200g of 00 flour for the sauce, a kilo of the most flavoursome fresh tomatoes you can find, garlic, chilli (to taste but don't go mad) salt in necessary, a little sugar if your toms are less than perfect, 300g olives, pips removed, plenty of olive oil.
