4 Beautiful Pork Tenderloins, grilled to perfection on the Big Joe. • Started with 2 packs of pork tenderloin from Costco. • Tied 2 tenderloins together to make 2 even logs for more even cooking. • Seasoned with Pork Barrel seasoning from Costco.. • Set up the Big Joe for indirect and direct cooking, deflection plates on the bottom on one side and both racks at the highest position. • Brought the grill up to 400 degrees to start the cook and added apple chunks for smoke. • Placed the pork tenderloins on the indirect side and waited until we go over 100 degrees before moving them to the direct side to finish. I was shooting for internal temperature of 145 degrees before pulling them off the grill. • Pulled the pork tenderloin and covered for about 20 minutes before cutting.
