Serendipity is a savory zero proof cocktail from Existing Conditions in NYC (Dave Arnold, Don Lee & Greg Boehm's beloved bar which is unfortunately now closed permanently due to the pandemic) that changed my whole mind for the better about non alcoholic cocktails ...and agar powder. It is truly a game changer. This was just one of those drinks I couldn’t get out of my mind since the last time I had it. A savory non alcoholic cocktail is quite unusual to find. One would not typically think to combine the flavors of tomato, passionfruit and grapefruit, but they all work so beautifully together. While I didn’t get it perfect, i still very much enjoyed the final product, as well as the process of making it. It was fun learning how to effectively use agar for different purposes in clarification as well as the grapefruit pearls. Agar is so much fun :) My take on EC’s Serendipity: 1.5oz clarified tomato juice 1.5oz clarified passion fruit juice Grapefruit twist (expressed) Garnish: Grapefruit pearls inside a passionfruit half Mix and serve over a large ice cube.
