South African "Slap" chips. Roughly translated to "Lazy" or "Floppy" chips. Not to be mistaken for crispy French fries! These chips are thicker and seldom crispy. They are fried and traditionally packed in newspaper and seasoned generously with salt and vinegar with a sauce of your choice(Try the PINK sauce!). I think it is the best thing you can do with the humble potato. The secret to Great Slap Chips is the potatoes and clean cooking oil. Sifra Potatoes are classified as Waxy/Floury Potatoes due to their high moisture and low starch content, great for making chips! Recipe ∙ Potatoes (The larger the better, makes for a longer and thicker chip) ∙ Sunflower oil ∙ Sea salt ∙ White spirit vinegar The Pink Garlic Chip Dip ∙ 3 cloves garlic ∙ ½ tablespoon onion powder ∙ 1 egg ∙ ½ teaspoon salt ∙ 1 teaspoon sugar ∙ 2 tablespoons vinegar ∙ 1 cup Sunflower oil ∙ 1/3 cup Tomato sauce(Ketchup) ∙ A pinch of cayenne pepper Chilli Chip Dip ∙ 2 garlic cloves ∙ ½ tablespoon onion powder ∙ 1 egg ∙ ½ teaspoon salt ∙ ½ teaspoon sugar ∙ 3 tablespoon lemon juice ∙ 1 teaspoon lemon zest ∙ 1 cup sunflower oil ∙ ½ tablespoon Peri-Peri(Dried Bird's eye chillies) ∙ 1 teaspoon dried oregano ∙ ½ teaspoon paprika Enjoy!☺ You can find us here: Facebook Page: https://www.facebook.com/Wolkberg-Art...
