Mama Young Teaching How to Make Potstickers

By request, Mom let me record her teaching us how to make potstickers. No specific measures of ingredients, based on how it looks and smells! Ingredients Potsticker filling includes: *1 bunch green onions diced *1/2 a Chinese cabbage diced *2 packs pickled mustard strips (optional) *3 lbs. fatty ground pork *2 lbs. lean ground pork *2-3 tablespoons sesame oil *2-3 tablespoons soy sauce *3-4 tablespoons oyster sauce *2-3 tablespoons salt *1-2 tablespoons sugar *2-3 teaspoons black pepper Potsticker dipping sauce includes: *1 tablespoon sesame oil *1 cup Zhenjiang vinegar *2-3 tablespoons oyster sauce (all are estimates, do it to your taste) After wrapping using Hong Kong style dumpling wrappers and water to fold and seal, add a high heat oil to a non-stick wok and add potstickers. Add water until about 1/3 of the potsticker is covered in water, then cover with lid so it'll steam while the water cooks off. Remove the lid and allow all water to cook off. Flip potstickers to check if bottom is slightly browned. If bottom of potstickers are browned to your liking, they're ready to be removed from the wok and serve with or without the dipping sauce.
