Garam masala is your go to spice mix to add quick flavor to all your dishes- be it vegetarian or non-vegetarian. Garam masala recipes also vary from region to region and family to family. The Punjabi Garam masala may have a strong flavor of Coriander and cumin while that from the southern part of the country may have less of these flavors and more of the spices like cloves, cinnamon and star anise. Sharing today, my recipe of a garam masala that is a family recipe. Along with the garam masala recipe there is also a Masala Aloo that packs all th puinch of the garam masala! Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN **************************************************************************** Recipe : Garam Masala Preparation Time: 11-15 minutes Cooking time: 5 minutes Makes: Approx. 300g Ingredients: 12 Black Cardamoms 6 tbsp Black Peppercorns 6 X 2” Cinnamon Sticks 2 tbsp Cloves 30 Green Cardamoms 2 blade Mace 8 tbsp Coriander Seeds 6 tbsp Cumin Seeds 2 Nutmeg 12 Bay Leaves 2 Star Anise 1 tsp Caraway seeds Method Take a pan and lightly roast the whole masalas at a medium low flame one by one: cumin seeds, coriander seeds, black pepper, cloves, small cardamoms, big cardamoms, nutmeg, cinnamon, caraway seeds and mace. Mix all the roasted spices, let cool and grind to a fine powder. Store in an airtight jar. Aloo Garam Masala Ingredients: 500g baby potatoes Salt 1 tsp Cumin seeds 1 tbsp Garam masala 1 tsp Red chili powder 1 tbsp besan Chopped Coriander leaves 2 green chilies ½ tsp turmeric powder 2 tbsp Mustard Oil Method: Parboil the potatoes. Cool and peel the potatoes. Cut the larger potatoes into halves. Heat the mustard oil to smoke point. Add the salt and allow the oil to cool down a bit. Add the cumin seeds. As the cumin seeds splutter, add the potatoes. Turn the potatoes once and allow to crisp from one side. Turn and cook over medium heat for 8-10 minutes till the potatoes are golden and crisp. Add the turmeric powder, red chili powder and green chilies. Mix well. Remove the potatoes to one side and add the besan. Sauté the besan till lightly fragrant. Mix with the potatoes and toss well. Add the garam masala and remove from heat. Mix well.
