Take a wide pan and add oil. 2. Once the oil is hot, add chana dal, urad dal, mustard seeds and cumin seeds. 3. After the mustard seeds start splattering, add roughly cut up red chillies, hing and finely chopped onions. 4. Add curry leaves and mix. Saute until the onions are golden brown in color. 5. Add slit green chillies, freshly pounded ginger garlic paste and saute for about 1 minute. 6. Then add the chopped tomatoes. Add salt, turmeric powder, red chilli powder and coriander powder. 7. Mix well until the oil separates. Pour water, mix well, cover the pan with a lid and cook the masala base for 5 mins on medium flame. 8. After 5 mins, add the cooked potatoes and mix well with the masala base. Make sure it coats every potato piece 9. Add garam masala and mix well. Check for seasoning and add salt/red chilli powder if required. 10. Finally garnish the curry with finely chopped coriander leaves. 11. Tamil Wedding Style Potato Masala is ready to be served hot and nice with rice/phulka. Wedding style potato curry is a special attraction in most of the Tamil Nadu wedding meals. This is a semi dry curry which is served along with other side dishes. This wedding style potato curry has a minimal amount of masalas and this can be enjoyed with plain rice/ pulao rice or any other phulka/chapati. The style of making this curry is a bit different from the usual potato curries we make. This is very flavorful and everybody will enjoy the taste. You can make this for lunches and also lunchboxes.
