Smoked Turkey on the Pit Boss Pro Series 1150

Smoked Turkey on the Pit Boss Pro Series 1150 Wet Brine: •24 cups cold water •4 cups ice •4 cups apple juice •1.5 cups kosher salt •1 cup brown sugar •1 Tbsp whole cloves •1 Tbsp black peppercorns •5 garlic cloves, smashed •1 large yellow onion, quartered •3-4 sprigs fresh Thyme •3-4 sprigs fresh Rosemary •bunch of Sage •2 oranges, slices •2 lemons, sliced •1 lime, sliced •Bring 20 cups water, 4 cups apple juice, kosher salt and brown sugar to a boil. Lower to a simmer until salt and sugar are dissolved. •Add in 4 more cups of cold water and 4 cups of ice, as well as citrus, herbs, spices, garlic and onion. •Place Turkey in brine and put in cooler (with ice) or fridge for at least 1 hour per pound, preferably 18-24 hours. Dry Rub: •1/2 cup brown sugar •2 Tbsp kosher salt •1 Tbsp course black pepper •1 Tbsp garlic powder •1 Tbsp onion powder •1 Tbsp smoked paprika •1 tsp chili powder •1 tsp cayenne pepper •1 tsp ground thyme •1 tsp poultry seasoning •Remove Turkey from brine, rinse and pat dry with paper towels. make sure turkey is completely dry •Rub olive oil or cooking spray all over skin and apply dry rub. Be generous! •Preheat smoker to 180° (smoke mode) and let rub set. •Place turkey on grill and smoke for 1.5 - 2 hours, then turn temperature up to 300°. if using meat probes, place one in the breast and one in the thickest part of the thigh. •Cook for approximately 4-5 more hours, until the breast reaches 165° and the thigh is between 165-170°, baste with garlic/herb butter every hour or so after the first 2 hours at 300°. Remove from grill and let rest for 15 minutes, then carve and serve. Mike's BBQ Bacon Brussels Sprouts: •3 lbs Brussels sprouts, halved •12 oz pack of bacon, chopped •1 large red onion •4 garlic cloves, minced •2 Tbsps brown sugar •1 tsp salt •1 tsp pepper •Chop bacon, cook over medium heat in cast iron pan. Drain half the grease, add a Tbsp of olive oil and remaining ingredients. •Cook until sprouts are beginning to crisp •Put pan in grill at 300° for 45 mins - 1 hour or at 350° for 35 minutes.
