‘What I eat in a week’ vlog that features the places I visited while in San Diego for a work conference. Join me as I tour historic sites and try different vegan dishes all over San Diego. I also share tips that can help make life easier as a vegan traveler. *Day 1: Late arrival into town. *Day 2: Trip to San Diego Zoo Cafe Gratitude in Little Italy: Healthy, organic plant-based vegan food 1. I Am Gifted: Juice made from beets, pineapple, grapefruit, ginger, and lemon 2. I Am Hospitable: Belgian oat waffle, ‘chik’n-fried’ oyster mushroom, cashew whipped cream, maple syrup, and orange slices 3. I Am Festive: Mushroom carnitas, tortilla chips, roasted tomatillo sauce, cashew crema, sautéed kale (dish aka chilaquiles) Special Note: My friend had the I Am Open-Hearted which is a stack of 3 buckwheat flax pancakes topped with bananas and berries. *Day 3: Lectures all day followed by early night in to catch up on sleep. Ate salad throughout the day. *Day 4: More lectures then a trip to indulge in some vegan comfort food. Donna Jean in Banker’s Hill: Seasonal vegan comfort food 1. Cast iron Mac N Cheese: Smoked cheddar, gouda, green onions, breadcrumbs 2. Fungazi: Mozzarella, ricotta, duxelles, mushrooms red onions, spinach, truffle cream, parmesan 3. Ravioli Caprese: Confit cherry tomatoes, mozzarella, basil, parmesan, tomato beurre blanc, balsamic 4. Panna Cotta: Coconut, hazelnut crumble, blueberry *Day 5: Final lectures and trip to La Jolla, Balboa Park, South Park, and night of departure. Tribal Sanctuary in La Jolla: 100% Organic, vegan, plant based without gluten, soy, or refined sugar. 1. Quinrizo Con Huevos: Quinoa ‘chorizo’ with cauliflower eggz, served with pico, avocado, sour cream, warm corn tortillas and a side salad 2. Original Trilogy Pancakes: A trio of pancakes topped with strawberries, banana, peanut butter, maple syrup, coconut flakes and cacao nibs Kindred in South Park: Contemporary vegan cocktail bar 1. Skewers: Chargrilled seitan, chimichurri, harissa, and horseradish aioli 2. Miracle Cure: Pineapple, lime, coconut, passion fruit, Thai basil, lemongrass, charcoal, and a shot of light rum 3. High Steaks: Za’atar crusted grilled maitake medallions, calabrian chile oyster mushrooms, crispy saffron sushi rice, pomegranate, almond tzatziki, and toasted pine nuts 4.
