INGREDIENTS👨‍🍳 Chicken - 1 whole, quartered Yellow onion - ½, quartered Garlic - 7 cloves Salt - 1 tsp Black pepper - ½ tsp Roasted Aromatics Sesame seeds - ½ cup Pumpkin seeds - ½ cup Cinnamon - 1 stick Cloves - 4 Black peppercorns - ½ tsp Recado (sauce) Dried chili chipotle - 2 Dried chili ancho - 2 Tomatoes - 6 Bell pepper - 1 Garlic - 5 cloves Onion - 1 Vegetables Potato - 1 String beans - ½ lb Carrot - 1 Cilantro - ½ cup Serving White rice PERSONAL NOTE ✒️ Pepián de Pollo is a chicken stew that is very popular in Guatemala. The secrete is in the recado (sauce) - I love the flavor from the roasted sesame and pumpkin seeds. You could dry roast the vegetables in the recado as well, but boiling them before blending works well. Pepian is a wonderful and delicious dish.
