Grab zucchini on the uncut end and start grinding the cut end. Ones you finish you will have the uncut end in your hand so this way you will not lose the last slice 😊 ❗You can use the vegetables you like, for example mushrooms, bell pepper etc. ❗For gluten free version you can use chickpea flour, rice flour or buckwheat flour. 🥣Method and ingredients: Grate 2 zucchini. Cut 250g | 1.5 cup cherry tomatoes in half. Cut 1 onion into slices. Chop 2 garlic cloves. Add 250g | 2 cups flour and 100g | 1 cup ground almonds. Mix in 1tsp Italian herbs, 1/4tsp black pepper and salt to taste. Stir well until all ingredients combined. Pour 2tbsp oil. Transfer the mixture into the parchment lined baking tray. For a crispier result do not use parchment paper, just grease a non-stick baking tray with oil. The diameter of the baking tray I use for this recipe is 20x30cm (8x12inch). Bake in the preheated oven at 375F | 190C for 60 minutes or until pizza edges are crisp and the top is beginning to brown. Let’ make protein rich, creamy and flavourful dip sauce 😊 Add 130g | 1 cup raw cashew, 110g | 1/2 cup dairy free yogurt, 120g | 1/2 cup salsa, 3tbsp water, 2tbsp nutritional yeast, 1/2tsp paprika, 1/2tsp cumin, 1/8tsp black pepper and pinch of salt to a food processor. Process until smooth. Add more water if a thinner sauce is desired. You can store home made dip in the fridge for up to 3-4 days. Remove zucchini pizza from the oven and cut into squares.
