Try with: Beef and Pork Pastelles -    • How to make Trini Beef Pastelles   Chicken Pastelles -    • How to make Trini Chicken Pastelles   Subscribe and Like @Central Market Kitchen for great recipes. *************************************** Piccalilli Ingredients 1 ½ cup Cauliflower 1 cup pearl onions 1 ¼ cup cucumber 1 cup asparagus 1 ¼ cup carrots 1 ½ Tbs salt 1 ½ Tbs sugar 3 cups vinegar 3 Tbs cornstarch 2 Tbs sugar 2 Tbs turmeric 3 Tbs mustard ¼ cup mango diced finely Instructions Chop all vegetables into bite sized pieces. Place vegetables in a bowl with cold water 1 ½ Tbs salt, and 1 ½ Tbs sugar for 2 to 3 hrs. In a small bowl combine cornstarch with ¼ cup vinegar and mix into a slurry. In a large pot add remaining vinegar, cornstarch slurry, sugar, turmeric, mustard, and mango. Whisk to combine and place on a medium high heat until thickened. Drain vegetables and add into vinegar mixture. Allow to simmer on a low heat for 10 mins. If a softer texture is preferred, simmer vegetables for an additional 5 mins. Allow to cool, and place in sterilized jars.
