Vegetarian Nyonya Curry Noodles

Soup Base - Ingredients: 3 litres Water 5 pieces Pandan Leaf 5 stalks Lemongrass (crushed) 1 stalk Ginger Bud 10 pieces Kaffir Lime Leaf Spices A (Ground): 80 ml Oil 4 pieces Red Chillies 8 gm Dried Chillies 3 stalks Lemongrass 10 pieces Candlenut Spices B: 3 tablespoons Curry Powder 2 tablespoons Coriander Seed Powder 2 cm Turmeric 100 ml Coconut Milk 1 Tbl Sugar 2 Tbls Salt Seasonings: 80 ml Light Soy Sauce 30 gm Rock Sugar 2 tsp Salt 400 ml Coconut Milk Other Ingredients: 1 kg Noodles (blanched & drained) 500 gm Rice Vermicelli (soaked, blanched & drained) 200 gm Bean Sprout (blanched) 20 pcs Bean Puff (cleaned, squeezed dry & halved) 200 gm Long Bean (blanched, cut into pieces) 200 gm Carrot (blanched, cut into strips) 1 stalk Ginger Bud (finely chopped) Some mint leaves Methods: 1) Soup Base - Bring water to boil, put in all the ingredients. Turn heat to low and simmer for ½ hour. Strain and discard the residue. 2) Spices – Heat up a wok, add in ingredients A and saute in low heat until the oil is separated out. Put in the ingredients B and stir-fry until aromatic. Add soup base and bring to boil. Add seasonings, bean puff, bring to boil and immediately turn off the heat. 3) Arrange some ingredients into individual serving bowl, and pour in the hot curry soup. Garnish with some mint leaves and chopped ginger bud. Ready to serve. 汤底 - 材料: 3 公升 水 5 片 班兰叶 5 支 香茅(拍扁) 1 支 姜花 10 片 疯柑叶 香料 A(磨烂): 80 毫升 油 4 条 红辣椒 8 克 辣椒干 3 支 香茅 10 粒 士古仔 香料 B: 3汤匙 咖哩粉 2 汤匙 芫荽籽粉 2 公分 黄姜 100 毫升 椰奶 1 汤匙 糖 2 汤匙 盐 调味料: 80 毫升 酱青 30 克 冰糖 2 茶匙 盐 400 毫升 椰奶 材料: 1 公斤 面(烫过,滤干水) 500 克 米粉(烫过,滤干水, 浸软) 200 克 豆芽(烫过) 20 粒 豆腐卜(洗净,挤干,切半) 200 克 長豆, 切段(烫过) 200 克 红萝卜(烫过, 切条) 1 支 姜花 (切碎) 适量薄荷叶 做法: 1) 汤底 - 将水煮滚,加入全部材料。煮½个小时。以最小火煨煮½小时。过滤去渣。 2) 香料 – 热油锅,加入材料A,用小火爆香至出油。 放入材料B,炒至香。加入汤底煮滚。加入调味料,豆腐卜煮滚,立刻关火。 3) 把适量材料放在碗里,淋上咖哩汤,放上薄荷叶和姜花碎,即可享用。 Thank you for watching. 谢谢你的收看.
