Poolish is something I frequently make and use in my bread recipes. It's easy to make, and can do a lot for even the simplest of bread loaves. This video is all about the basics of Poolish. What it is, why to use it, and how to use it. The video starts all the way from some preferment basics, introducing the names of some types(biga, sponge, pâte fermentée), to how I normally like to use and make Poolish. As a note, I typically use fruit yeast water to make my Poolish and this video is mainly focused on that during the making process.
