Cook the Sugar until it turns slightly sticky like Gulab Jamun Sugar Syrup, then turn the flame off. 𝐅𝐨𝐫 𝐁𝐨𝐨𝐧𝐝𝐢, take a big bowl & put sieved Gram Flour, Baking Soda, Salt & make the batter by adding some Water gradually. Whisk the batter in one direction with the whisker & keep for 10-15 minutes. Heat Oil in a pan for deep frying. When Oil becomes hot, pour the batter slowly over the skimmer or grater. Tap its edge so that droplets of batter fall into the Oil. Repeat the process & make a colorful Boondi. Stir occasionally until they become crisp and bright yellow in color. Then transfer the fried Boondi into the lukewarm sugar syrup and dip it completely. put some Ghee, roasted Melon Seeds, cover and rest for 1-2 hours. At last, take out the ready Boondi on a plate. Finally, meethi Boondi is ready to enjoy. 𝟐𝐧𝐝 𝐑𝐞𝐜𝐢𝐩𝐞 𝐅𝐨𝐫 𝐒𝐮𝐠𝐚𝐫 𝐒𝐲𝐫𝐮𝐩, in a pan, put Sugar & Water, when Sugar gets melted, put some Cardamom & Tandoori Color in it & make the sticky Sugar Syrup like Gulab Jamun Sugar Syrup. 𝐅𝐨𝐫 𝐁𝐨𝐨𝐧𝐝𝐢 𝐁𝐚𝐫𝐟𝐢, in a bowl, take some Gram Flour, a pinch of Tandoori Colour & make a liquidy batter by adding Water as required. Then take any plastic polythene & make a tiny hole in the corner. Firstly, check it with the Water & then put the Batter into it & make the small boondi. Flip and fry them in the medium-heated Oil until they get golden in color or crunchy. Take out the fried boondi on a steel jali to remove excess oil. Simmer the flame to low. Add the boondi to the sugar syrup. Cover it & cook slowly for some mins. When the Boondi absorbs the Sugar Syrup then put some Ghee & Milk Powder in it & cook for more time. Finally, turn the flame off & grease a tray with ghee & place butter paper in it. Transfer the sweet boondi mixture to the greased tray. Then spread the boondi & level the surface & set for an hour. Cut into pieces & garnish with Pistachios & Silver leaf & enjoy a tasty dessert.
