This dish combines aromatic basmati rice with succulent chicken and fragrant spices, creating a delightful meal. Ingredients For the Chicken Marinade 900g chicken (give slit and open the skin flap) 3 table spoon oil 2 tablespoon ginger-garlic paste 1 table spoon coriander powder 1 tea spoon cumin powder 1 teaspoon garam masala 1 tablespoon red chili powder 1 tea spoon thyme optional 1 table spoon fenugreek dry leaves hand crushed 1tea spoon baking powder 1 tea spoon salt 1 lemon juice marinate all this above ingredient let it rest for 1 hour Salt to taste Fresh coriander leaves (chopped, for garnish) Instructions Marinate the Chicken In a large bowl, mix all the ingredient. Add the chicken and coat them well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for best results. Prepare the Rice For the Rice 3cups basmati rice 1 and half liter water 1 teaspoon salt 3 tablespoon ghee and oil 20-25 saffron strands (soaked in 2 tablespoons warm milk) Wash the basmati rice thoroughly and soak it in water for 30 minutes. In a large pot, bring water to a boil. Add salt and ghee or oil. add species cardamom / cloves / black pepper/bay leaves Add the soaked rice and cook until the rice is 90% done (it should still have a bite to it). Drain the rice and set aside. boil some eggs 4-6 Add the marinated chicken pieces and cook in cooker until the chicken is cooked through and the oil starts to separate from the masala. Check seasoning and adjust salt as needed. and to give roasted look keep this boiled chicken in broil and cook for 10 mins Assemble the Dish In a large pot or a deep pan, layer of the cooked rice. Add the chicken with eggs inserted curry on top of the rice./ and scatter some dry friuts like cashew/ rasins Drizzle the saffron milk over the top layer of rice. Cover the pot with a tight-fitting lid and cook on low heat (dum) for about 15-20 minutes, allowing the flavors to meld together. Serve Gently serve the rice and chicken together.
